A hearty, bean forward chili built with peppers, onion, garlic, tomatoes, spices, and balanced simmer that develops warmth without excessive heat. Thick, comforting, and familiar, with enough body to serve over rice, baked potatoes, or with cornbread.

Built to pair with cornbread, rice, roasted potatoes, or as topping for baked potatoes. For thicker chili, simmer uncovered the last 10 minutes.

You can swap beans freely. Chickpeas, navy beans, or great northern beans all work. For heat, add extra jalapeno, crushed red pepper, or small chipotle in adobo.

  • 15 oz pinto beans, drained and rinsed
  • 1 cup vegetable broth
  • 1 tbsp tomato paste
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro

Instructions

Heat the pot
Place large pot over medium heat (325-350°F). Add olive oil and let it warm for 30 seconds.

Sauté the aromatics
Add diced onion, green pepper, red pepper, and jalapeño if using. Cook 5 to 7 minutes until softened. Add minced garlic and cook 1 minute more without browning.

Bloom the spices
Add chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Stir and cook 30 seconds until fragrant.

Add the tomatoes and broth
Stir in tomato paste and cook 1 minute to deepen flavor. Add crushed tomatoes and vegetable broth. Stir until smooth.

Add the beans
Add black beans, kidney beans, and pinto beans. Stir to distribute evenly throughout pot.

Simmer the until thickened
Bring to gentle simmer, then reduce heat to low. Cook 20 to 30 minutes, stirring occasionally, until chili thickens and flavors meld.

Finish with lime
Stir in lime juice to brighten pot. Taste and adjust salt if needed. Add chopped cilantro if desired.
