A brighter, more layered vegetable stir fry with deeply aromatic oil, staged cooking, and a lacquered sauce built from soy, rice vinegar, oyster sauce, and a small amount of mushroom concentrate. Vegetables stay crisp tender and carry more savoriness and fragrance than a classic version.

This version pairs back strongly to chicken stir fry, scallion fried rice, blistered green beans, and wok fried noodles. Mushroom concentrate or dark soy deepens savoriness without overpowering vegetables.

Removing aromatics prevents burning and keeps sauce smooth. For more heat add pinch of chili flakes or teaspoon chili crisp during stage 4.

  • 1 tsp mushroom concentrate or teaspoon dark soy
  • 1 tsp cornstarch
  • 3 tbsp water
  • 1 tsp sesame oil
  • 1 tsp sesame seeds

Instructions

Make the sauce
Whisk soy sauce, oyster sauce, rice vinegar, brown sugar, mushroom concentrate or dark soy, cornstarch, and water until smooth. Set aside.

Sauté the aromatics
Heat wok over medium until warm. Add neutral oil. Add garlic, ginger, and white parts of scallions. Stir 30 seconds until fragrant. Do not let aromatics brown. Remove aromatics from wok with spoon and set aside. Leave flavored oil in wok.

Stir-fry firm vegetables
Increase heat to high. Add broccoli, carrots, and onion. Stir fry 3 minutes until edges begin to soften.

Add the remaining vegetables
Add bell peppers, zucchini, snap peas, and the cooked aromatics. Stir fry 2 to 3 minutes until bright and crisp tender.

Add the sauce
Pour sauce into wok. Stir continuously 1 to 2 minutes until thickened and glossy.
