  • 4 tbsp achiote paste
  • 4 whole dried guajillo chiles
  • 2 whole dried ancho chiles
  • 2 whole dried árbol chiles
  • ½ whole fresh pineapple
  • ¼ cup orange juice
  • ¼ cup pineapple juice
  • 3 tbsp white vinegar
  • 6 cloves garlic cloves
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ¼ tsp ground cloves
  • 1 ½ tsp salt
  • 1 medium red onion
  • ¼ cup lime juice
  • ½ whole habanero, minced
  • ½ cup fresh cilantro
  • 12 whole corn tortillas

Instructions

Make the marinade
Toast all chiles, soak 20 minutes. Blend with achiote, both juices, vinegar, garlic, cumin, oregano, cloves, and salt.

Pickle the onions
Slice red onion thin. Toss with lime juice and salt. Let sit while pork marinates.

Marinate the meat
Coat pork with marinade. Refrigerate 4 hours minimum, overnight best.

Make the pineapple salsa
Grill pineapple slices until charred. Dice and mix with minced habanero, cilantro, and pinch of salt.

Grill pork at 450°F or over direct flame until charred, 3-4 minutes per side. Chop into small pieces.
