Steak tacos built around a deep red chile adobo marinade, seared hard for crust and finished with softened tortillas, charred onions, and a warm chile oil finish. Savory, juicy, and cohesive, with no dry components and no raw filler.

These tacos are built to stay moist. Every element includes fat or warmth. Flour tortillas emphasize richness; corn tortillas add contrast.

Designed to replace dry, flat taco builds that rely on cold sauces. Additional toppings should be cooked or dressed. Raw components break cohesion.

Instructions

Make the adobo
Toast dried chiles in a dry skillet over medium heat (325-350°F surface) until fragrant, about 30 seconds per side. Remove stems and seeds. Place chiles in a bowl with hot water and soak 15 minutes until soft. Blend softened chiles with garlic, cumin, oregano, vinegar, oil, salt, and soaking liquid until smooth. The texture should be loose but concentrated.

Marinate the steak
Place steak in a bowl or bag and coat fully with the adobo. Cover and refrigerate at least 30 minutes, ideally 4 to 12 hours.

Prepare the onions
Heat 1 tablespoon oil in a skillet over medium heat (325-350°F surface). Add sliced onions with a pinch of salt and cook until softened and lightly charred. Remove and set aside.

Sear the steak
Remove steak from marinade, letting excess drip off. Heat skillet to 425-450°F (verify with infrared thermometer). Add 1 tablespoon oil. Sear steak 2 to 3 minutes per side until deeply browned. Target internal temperature 130-135°F for medium rare, 135-140°F for medium. Remove and rest 5 minutes.

Warm the tortillas
Reduce heat to medium. Add tortillas to the skillet one at a time, brushing lightly with the reserved chile oil. Warm until pliable and lightly toasted.

Slice the steak
Slice steak thinly against the grain. Toss lightly with any resting juices.
