Long-marinated skirt steak fajitas with chile butter and handmade tortillas.

SHOPPING: Dried ancho and guajillo chiles. Good lard for tortillas. This is a project but creates good results.

  • 2 lb Outside skirt steak
  • 3 whole Dried ancho chiles
  • 2 whole Dried guajillo chiles
  • 6 clove Garlic cloves
  • 1 tbsp Ground cumin
  • 1 tsp Mexican oregano
  • ¼ cup Lime juice
  • 4 tbsp Butter for chile butter
  • 2 cup All-purpose flour
  • ¼ cup Lard
  • 3 whole Bell peppers
  • 1 whole Onion
  • 6 piece Tomatillos
  • 2 whole Serrano peppers
  • ½ cup Fresh cilantro
  • ½ tsp Salt

Instructions

Make the chile marinade (48 hours ahead)
Toast and soak dried chiles 30 minutes. Blend with 4 garlic cloves, cumin, oregano, lime juice, and salt. Marinate steak 48 hours.

  • oregano (1 tsp)
  • lime (¼ cup)
Build the base
Make dough with flour, lard, salt, and warm water. Rest 30 minutes. Press and cook tortillas. Char tomatillos and serranos, blend with remaining garlic and cilantro for salsa.

Make the chile butter
Mix softened butter with 1 tbsp reserved chile paste.

On the grill
Grill peppers and onion over mesquite. Grill steak 3-4 minutes per side. Rest 5 minutes. Slice against grain.

Top hot steak with chile butter. Serve sizzling with vegetables, salsa, and fresh tortillas.
