Cut potatoes into uniform 1/2-inch pieces so they cook evenly and crisp at the same rate. Brown the sausage first and set aside; this renders fat to cook the potatoes and onion, building flavor.

Make-ahead: prep potatoes, apples, and onion up to 4 hours ahead; store separately in the refrigerator to prevent browning. Granny Smith apples hold their shape better than sweeter varieties and provide tartness to balance the rich cheese and sausage.

  • 1 ½ lb russet potatoes (about 4 medium potatoes)
  • 2 medium Granny Smith apples
  • 1 ½ cups sharp cheddar cheese (about 6 oz)
  • 1 medium yellow onion
  • 2 tbsp butter (1 tablespoon plus 1 tablespoon, divided)
  • salt (to taste)
  • black pepper (to taste)
  • 1 tsp fresh thyme (or 1/4 tsp dried)

Instructions

Brown the sausage
Heat the skillet over medium-high heat. Add breakfast sausage links and cook, turning occasionally, until browned and cooked through, about 8–10 minutes.
Transfer the sausage to a cutting board and slice into 1/2-inch rounds.

Cook the potatoes and onion
Add butter (1 tablespoon) to the skillet (with the sausage fat). Once melted, add the diced onion (1 medium) and cook, stirring, until softened, about 3 minutes.
Add 1.5 lb diced potatoes, season with salt and pepper, and stir to coat. Cook, stirring every 2–3 minutes, until the potatoes are golden and crispy, about 15–18 minutes.

Add apples and sausage
Stir in the diced apples and sliced sausage. Cook, stirring gently, until the apples soften slightly, about 3–4 minutes.
Melt the cheese
Reduce heat to low. Add the remaining butter (1 tablespoon) and stir until melted.
Sprinkle 1.5 cups shredded sharp cheddar over the skillet and stir gently until melted and evenly distributed, about 2 minutes.
Taste and adjust salt and pepper. Garnish with fresh thyme (1 tsp) if using.

Divide the skillet among four plates and serve hot.
