Crisp toasted bread topped with creamy whipped goat cheese and warm roasted butternut squash, finished with sage and a drizzle of aged balsamic.

For a nuttier flavor, toss squash with a pinch of ground cumin or smoked paprika before roasting. Balsamic reduction (simmered to syrupy consistency) intensifies the sweet-tart finish; use in place of regular balsamic if desired.

If fresh sage is unavailable, substitute 1 tsp dried sage mixed into the roasted squash, or use crispy sage oil drizzled on top. Roast squash ahead: prepare cubes and roast up to 2 days in advance; store in an airtight container in the refrigerator and reheat gently in a 350°F oven for 5 minutes before assembly.

Instructions

Roast the butternut squash
Preheat oven to 425°F.
Toss 2 cups peeled and cubed butternut squash (1 medium (about 2 lb)) with 2 tbsp olive oil, salt, pepper, and 2 sprigs fresh thyme (2 sprigs) on a sheet pan.
Spread in a single layer and roast until golden and tender, 25–30 minutes, stirring halfway through.
Remove from oven and discard thyme sprigs.

Whip the goat cheese
In a small bowl, combine 8 oz room-temperature goat cheese and heavy cream (3 tablespoon).
Whisk or beat with a mixer until light, fluffy, and spreadable, about 2–3 minutes.
Fold in 1 tbsp fresh lemon juice (1 tbsp) and season with salt and pepper to taste.

Toast the bread
Toast 4 slices thick-cut bread in a toaster or toaster oven until golden and crisp, 2–3 minutes.

Assemble the tartines
Spread 2–3 tbsp whipped goat cheese evenly on each toasted bread slice.
Top each tartine with a generous portion of warm roasted squash.
Drizzle each tartine with aged balsamic vinegar (½ tablespoon) and the remaining 2 tbsp olive oil.
Garnish with fresh sage leaves and a pinch of fleur de sel if desired.
