Creamy Arborio rice risotto with roasted pumpkin purée, crispy sage, nutmeg warmth, and browned butter finish.

Stir frequently (every 30–45 seconds) but not constantly; this releases starch gradually for creaminess without turning rice to mush. Risotto is done when rice is tender with a slight bite (al dente) and the mixture flows gently on the plate, not stiff.

For vegetarian risotto, use vegetable stock; for deeper flavor, use chicken stock. Keep stock simmering throughout cooking; cold stock will shock the rice and interrupt the creaming process.

  • 1 cup pumpkin purée (unsweetened canned or fresh roasted)
  • 1 ½ cups Arborio rice
  • 4 cups vegetable or chicken stock (keep simmering on adjacent burner)
  • 6 tbsp whole butter (divided: 2 tbsp for cooking, 4 tbsp for browning)
  • 12 leaves fresh sage leaves
  • 1 medium yellow onion
  • 2 cloves garlic cloves
  • ½ cup dry white wine
  • 1 cup Parmigiano-Reggiano cheese
  • ¼ tsp ground nutmeg

  • black pepper (to taste)

Instructions

Prepare the aromatics and stock
Dice 1 medium yellow onion finely and mince garlic cloves.
Pour vegetable or chicken stock (4 cup) into a small saucepan and bring to a gentle simmer over medium heat; maintain the simmer throughout cooking.
Equipment: small saucepan, large heavy-bottomed pot or wide shallow pan
Toast the rice
Melt 2 tbsp butter in a large heavy-bottomed pot over medium heat.
Add the diced onion and cook, stirring occasionally, until softened and translucent, about 3 minutes.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Add Arborio rice (1 ½ cup) and stir constantly for 1–2 minutes until the grains are coated and slightly translucent at the edges.
Equipment: large heavy-bottomed pot or wide shallow pan
Deglaze and begin the risotto
Pour in dry white wine (½ cup) and stir until almost completely absorbed, about 1 minute.
Build the risotto with stock
Add warm stock 1 ladle (about 0.5 cup) at a time, stirring frequently. Wait until each addition is mostly absorbed before adding the next.
Continue this process for 18–20 minutes, stirring every 30–45 seconds, until the rice is tender with a slight bite and the mixture flows gently.

Fold in pumpkin and seasonings
Stir pumpkin purée (1 cup) into the risotto until evenly distributed.
Add ground nutmeg (¼ teaspoon) and stir to combine.
Taste and season with kosher salt and black pepper to taste.
Crisp the sage leaves
In a small skillet, melt 1 tbsp of the remaining 4 tbsp butter over medium-high heat.
Add fresh sage leaves and cook, stirring gently, until crispy and fragrant, about 2 minutes. Transfer to a paper towel and set aside.

Brown the remaining butter
In the same small skillet, melt the remaining 3 tbsp butter over medium heat, swirling occasionally.
Cook until the butter foams and turns golden brown with a nutty aroma, about 3–4 minutes. Remove from heat immediately.

Finish and serve
Fold 1 cup finely grated Parmigiano-Reggiano cheese into the risotto until fully incorporated and creamy.
Divide the risotto among four shallow bowls.
Drizzle each serving with brown butter and top with crispy sage leaves.
