  • 1 medium white onion, diced
  • 3 cloves garlic cloves, minced
  • 3 medium Roma tomatoes, diced
  • 2 medium potatoes, diced small
  • ⅓ cup raisins
  • 1 tsp ground cumin
  • ¼ tsp ground cinnamon
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil

Instructions

Brown the beef
Heat oil in skillet. Brown ground beef, breaking up. Drain excess fat.

Sauté the aromatics
Add onion and garlic. Cook until softened, 3 minutes.

Simmer the vegetables
Add tomatoes, potatoes, raisins, cumin, cinnamon, salt, pepper. Stir. Cover and cook 20 minutes until potatoes are tender.

Build the tacos
Serve with rice and warm tortillas.
