Toast walnuts in a dry skillet over medium heat, stirring frequently, until fragrant (2–3 minutes). This step is essential for flavor and crunch. Choose ripe but firm pears; very soft pears will break down too much during baking. Dice them just before mixing to prevent browning.

Make-ahead: Assemble the baking dish, cover, and refrigerate up to 8 hours. Add 5–10 minutes to bake time if baking from cold. Mince fresh ginger finely so it distributes evenly; large pieces can be overpowering.

Mix wet ingredients
In a large bowl, whisk together 2 large eggs (2 large), whole milk (1 ½ cup), unsweetened applesauce (½ cup), maple syrup (¼ cup), 3 tbsp melted butter, 1 tbsp minced fresh ginger (1 tbsp), and vanilla extract (1 teaspoon) until smooth.

In another bowl, stir together rolled oats (2 cup), baking powder (1 ½ teaspoon), ground cinnamon (1 teaspoon), and salt (¼ teaspoon).
