Silky sour cocktail balancing aged Cognac, fresh pear, and bright lemon with restrained sweetness and a frothy egg white cap.

Dry shake first: combine egg white, lemon juice, and simple syrup without ice for 10–15 seconds to build foam, then add Cognac, pear juice, ice, and bitters for a second wet shake. This two-stage technique creates the silkiest foam. Chill the coupe glass in the freezer for 5 minutes or fill with ice water while you build the drink.

Pasteurized eggs eliminate food-safety concern; check carton label or use pasteurized liquid egg white as substitute. Use fresh-squeezed lemon juice; bottled loses brightness quickly.

  • 2 oz Cognac (VSOP or higher recommended)
  • 1 oz pear juice or nectar (fresh or high-quality bottled)
  • ¾ oz fresh lemon juice
  • ½ oz simple syrup (1:1 sugar to water ratio)
  • 1 large egg white (pasteurized or from pasteurized eggs recommended)
  • ice (for shaking and serving)
  • 2 dashes Angostura bitters
  • 1 pear slice (for garnish)

Instructions

Chill the coupe glass
Place the coupe glass in the freezer or fill with ice water to chill.
Equipment: coupe glass or cocktail glass
Dry shake the egg white and citrus
Pour 1 large egg white (1 large), fresh lemon juice (¾ ounce), and simple syrup (½ ounce) into the cocktail shaker.
Shake vigorously without ice for 10–15 seconds until foamy.

Wet shake with Cognac and pear
Add Cognac (2 ounce), pear (1 ounce) juice, a handful of cubed ice, and 2 dashes Angostura bitters (2 dashes) to the shaker.
Shake hard for 10–12 seconds until the shaker is very cold.

Strain and serve
Empty the chilled coupe glass and strain the cocktail through the Hawthorne strainer into the glass, pouring slowly to preserve the foam cap.
Garnish with a thin pear slice if desired and serve immediately.
