  • 2 piece NY strip steak
  • 1 tsp Kosher salt
  • ½ tsp Black pepper
  • 2 tbsp Vegetable oil
  • 3 tbsp Butter
  • 12 oz Cremini mushrooms, sliced
  • 2 tbsp Shallot, minced
  • 3 sprigs Fresh thyme
  • ⅓ cup Dry white wine
  • ⅓ cup Beef stock
  • ½ cup Heavy cream
  • 1 tbsp Fresh parsley

Instructions

Sear the steaks
Season steaks with salt and pepper. Sear in hot cast iron with oil, 4-5 minutes per side. Rest.

Make the mushroom sauce
Add butter. Cook mushrooms until golden, 6-8 minutes. Add shallot and thyme, cook 1 minute. Add wine, reduce. Add stock, reduce by half. Off heat, stir in cream. Simmer gently 2 minutes.

Add the fresh herbs
Spoon sauce over steaks. Garnish with parsley.
