  • 3 whole dried mulato chiles
  • 3 whole dried pasilla chiles
  • 2 medium Roma tomatoes
  • 1 medium white onion
  • 4 cloves garlic cloves
  • ¼ cup almonds
  • ¼ cup raisins
  • 2 tbsp sesame seeds
  • 1 whole corn tortilla
  • 1 ½ oz Mexican chocolate
  • 1 small cinnamon stick
  • 3 whole whole cloves
  • 4 cup chicken broth
  • ¼ cup lard or oil
  • 1 tbsp salt
  • 1 tbsp sugar

Instructions

Char the chiles
Toast all chiles in dry skillet until fragrant. Cover with hot water, soak 30 minutes.

  • chicken broth (4 cup)
Bloom the spices
Toast almonds, sesame seeds, and cinnamon until fragrant. Fry tortilla until dark. Char tomatoes, onion, garlic.

Prepare the base
Blend drained chiles with charred vegetables, nuts, seeds, raisins, tortilla, cinnamon, cloves, and 2 cups broth until very smooth. Strain.

Fry and cook sauce
Heat lard in Dutch oven. Fry sauce 10 minutes, stirring constantly. Add remaining broth, chocolate, sugar, salt. Simmer 30 minutes.

Add the chicken
Nestle chicken into sauce. Cover and simmer 45 minutes until cooked through.

Toast remaining sesame seeds. Serve chicken with sauce, garnished with sesame.
