  • 6 whole dried ancho chiles
  • 5 whole dried mulato chiles
  • 4 whole dried pasilla chiles
  • 2 whole dried chipotle chiles
  • 2 whole dried negro/chilhuacle chiles
  • 4 medium Roma tomatoes
  • 4 medium tomatillos
  • 2 medium white onion
  • 1 head garlic head
  • ½ cup almonds
  • ¼ cup peanuts
  • ¼ cup pepitas (pumpkin seeds)
  • ⅓ cup sesame seeds
  • ⅓ cup raisins
  • 4 whole prunes
  • 1 whole ripe plantain, sliced and fried
  • 2 whole corn tortillas
  • 1 slice bolillo or French bread
  • 3 oz Mexican chocolate
  • 1 oz bittersweet chocolate
  • 1 tbsp unsweetened cocoa powder
  • 2 whole cinnamon sticks
  • 6 whole whole cloves
  • 10 whole black peppercorns
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • ½ tsp anise seeds
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • ½ cup lard
  • 8 cup turkey or chicken broth
  • 2 tbsp salt
  • 2 tbsp piloncillo or brown sugar

Instructions

Day 1: Toast and soak chiles
Toast each chile variety separately until fragrant. Soak all in hot water overnight.

Day 1: Toast nuts, seeds, spices
Toast almonds, peanuts, pepitas, and half the sesame seeds until golden. Toast cinnamon, cloves, peppercorns, cumin, coriander, anise until fragrant.

Day 1: Char vegetables and fry bread
Char tomatoes, tomatillos, onions, and garlic over flame or in dry skillet until blackened. Fry tortillas and bread in lard until dark. Fry plantain slices until caramelized.

Day 2: Blend in batches
Blend chiles with soaking liquid. Separately blend vegetables. Separately blend nuts, seeds, spices, tortillas, bread, dried fruit with some broth. Strain all through fine mesh.

  • prunes (4 whole)

  • coriander (½ tsp)

Day 2: Cook sauce
Heat lard in large pot. Fry chile puree 10 minutes. Add vegetable puree, fry 10 minutes. Add nut puree, fry 10 minutes. Add remaining broth, all three chocolates, cocoa, oregano, thyme, salt, sugar. Simmer 1 hour, stirring often.

Cook the turkey
Poach or roast turkey pieces separately. Add to sauce or serve sauce over.

Build the tacos
Toast remaining sesame seeds. Serve turkey with generous sauce, garnished with sesame. Accompany with rice and tortillas.
