Crusty Stir-and-Bake Peasant Bread

Crusty Stir-and-Bake Peasant Bread

Published September 18, 2026

Rustic, high-hydration dough mixed by hand with a wooden spoon, no kneading required. Baked on a sheet pan to a golden, crackling crust with an open crumb.

The dough is intentionally wet and sticky—do not add extra flour. This creates the open, airy crumb. Bulk fermentation time depends on room temperature: 4–6 hours at 70°F, 2–3 hours at 75°F. The dough should roughly double and jiggle when the bowl is gently shaken.

Store cooled bread wrapped in a kitchen towel or paper bag at room temperature for up to 2 days. Slice with a serrated bread knife. For extra crust crackle, place a shallow pan of hot water on the lower oven rack during baking to create steam.

Measurement units
  • 3 cups all-purpose flour
  • 1 ½ cups water
  • ½ tsp instant yeast
  • 1 ½ tsp salt

Instructions

Mix the dough
In a large mixing bowl, combine all-purpose flour (3 cup), instant yeast (½ teaspoon), and salt (1 ½ teaspoon).
Pour in 1.5 cups room-temperature water (1 ½ cups).
Using a wooden spoon, stir vigorously for 1–2 minutes until all flour is hydrated and the dough comes together into a shaggy, sticky mass. Do not knead.
Equipment: large mixing bowl, wooden spoon
Bulk ferment
Cover the bowl with a kitchen towel or plastic wrap.
Let the dough rise at room temperature until it roughly doubles in volume and jiggles when the bowl is gently shaken, 4–6 hours depending on room temperature.
Equipment: kitchen towel or plastic wrap
Shape and prepare for baking
Preheat the oven to 450°F.
Lightly flour a standard sheet pan.
Turn the dough out onto the floured pan. Gently shape it into a rough, rustic mound or oval, tucking the edges underneath to create surface tension. Do not overwork.
Let the shaped dough rest uncovered on the pan for 15–20 minutes while the oven finishes preheating.
Equipment: standard sheet pan, oven
Bake the loaf
Place the sheet pan in the preheated 450°F oven. Bake for 40–45 minutes until the loaf is deep golden brown and sounds hollow when tapped on the bottom.
Transfer the loaf to a wire rack or clean kitchen towel to cool for at least 15 minutes before slicing.
Equipment: oven
