Pork braised with beer, orange, and cinnamon until shreddable, then crisped.

Modelo, Negra Modelo, Tecate, or Pacifico all work. The lime adds brightness that cuts the richness.

Cinnamon is subtle-shouldn't taste like dessert.

  • 4 lb boneless pork shoulder
  • ½ cup lard
  • 12 oz Mexican lager
  • 1 whole orange, juiced
  • 1 whole lime, juiced
  • 8 cloves garlic cloves, smashed
  • 1 medium white onion, quartered
  • 1 whole jalapeño, halved
  • 1 whole cinnamon stick
  • 2 whole bay leaves
  • 1 tbsp salt
  • 1 ½ tsp ground cumin
  • 1 tsp dried Mexican oregano

Instructions

Prep the pork
Cut pork into 2-inch chunks. Season with salt, cumin, and oregano.

Build the braise
Place pork in Dutch oven. Add lard, beer, orange juice, lime juice, garlic, onion, jalapeño, cinnamon stick, and bay leaves. Add water to come halfway up the pork.

Braise until tender
Bring to simmer. Cover and cook on low 2.5-3 hours until pork shreds easily. Remove cinnamon stick and bay leaves.

Shred the meat
Transfer pork to sheet pan, reserving liquid. Shred with two forks.

Crisp until golden
Spoon braising liquid over pork. Broil 4-5 minutes until crispy. Toss, add more liquid, broil again.

Build the tacos
Serve with tortillas, pickled onions, salsa, and lime wedges.
