Warm, herbaceous syrup made by dissolving brown sugar in water with fresh sage, creating a malty-sweet coffee sweetener with subtle peppery notes.

Syrup thickens slightly as it cools; it will reach ideal pourable consistency at room temperature. Stir well before each use, as syrup may separate slightly during storage.

Store in a sealed glass jar in the refrigerator for up to 3 weeks. For a stronger sage flavor, steep the leaves for 2–3 minutes after removing from heat before straining.

Instructions

Combine brown sugar, water, and sage
Pour water (¾ cup) into a small saucepan.
Add 1 cup packed brown sugar and fresh sage leaves.
Equipment: small saucepan
Heat and dissolve
Set the saucepan over medium heat and stir constantly with a wooden spoon until brown sugar dissolves completely, about 2–3 minutes.
Once dissolved, bring the mixture to a gentle simmer.

Simmer and infuse
Maintain a gentle simmer for 5 minutes to allow the sage to infuse the syrup.
Strain and cool
Remove the saucepan from heat and let cool for 2 minutes.
Pour the syrup through a fine-mesh strainer into a clean glass jar or bottle, pressing gently on the sage leaves to extract any remaining liquid.
Discard the sage leaves and allow the syrup to cool to room temperature before sealing.
