Blackened fish with mango salsa, lime crema, and cilantro rice. Cajun meets Caribbean.

This is Caribbean-Cajun fusion. Mahi mahi is also called dolphinfish (not dolphin).

The salsa can be made a few hours ahead. Cilantro rice is a Latin American staple.

  • 4 6-oz pieces Mahi mahi fillets
  • 3 tbsp Cajun spice blend
  • 4 tbsp Butter, melted
  • 1 large Ripe mango, diced
  • ¼ cup Red onion, diced fine
  • 1 Jalapeno, minced
  • 3 Limes
  • ½ cup Fresh cilantro, chopped
  • 1 ¼ tsp Salt
  • ½ cup Sour cream
  • 1 ½ cup Long grain white rice
  • 1 tbsp Vegetable oil

Instructions

Start rice and make salsa and crema
Cook rice with 0.5 teaspoon salt. For salsa: combine mango, red onion, jalapeno, juice of 1 lime, 2 tablespoons cilantro, and 0.25 teaspoon salt. For crema: mix sour cream, juice of 1 lime, and 0.25 teaspoon salt.

  • mango (1 large)
  • red onion (¼ cup)
  • jalapeno (1 whole)
  • lime juice (2 whole)
  • cilantro (2 tbsp)
  • sour cream (½ cup)
Blacken the fish
Heat cast iron with oil over highest heat until surface reaches 450-500°F (oil will shimmer and just begin to smoke). Brush fish with butter, press into Cajun spice on both sides. Cook 3 minutes per side until blackened crust forms and fish is cooked through.

  • vegetable oil (1 tbsp)
  • mahi mahi (4 6-oz pieces)
  • butter (4 tbsp)
  • Cajun spice (3 tbsp)
Add the final drizzle
Fold remaining cilantro and juice of remaining lime into rice. Mound rice on plates. Place blackened fish on top. Spoon mango salsa over fish. Drizzle with lime crema. Serve immediately.
