Warm, creamy baked Brie topped with spiced apple butter, crunchy toasted pecans, and fresh thyme; served with bread, fruit, and crackers.

Toast pecans in a dry skillet over medium heat for 5–7 minutes while Brie bakes; stir often to prevent burning. Brie continues to soften slightly after removal from oven; serve within 5 minutes for optimal creamy texture.

Thyme leaves can be stripped from stems up to 2 hours ahead and stored in an airtight container. Apple butter can be warmed gently before topping if you prefer it to meld more seamlessly into the warm cheese.

  • ½ cup apple butter (store-bought or homemade)
  • ¾ cup pecans
  • 2 tbsp fresh thyme
  • 2 tbsp honey (for drizzle)

  • 1 loaf table bread (for serving)
  • 2 medium apples apple slices (for serving)
  • 2 medium pears pear slices (for serving)
  • 1 ½ cups grapes (for serving)
  • 8 oz crackers (assorted; for serving)

Instructions

Preheat oven and prepare Brie
Preheat oven to 350°F.
Place the Brie wheel (8 ounce) on a baking sheet, leaving it unwrapped or removing any paper wrapper.

Toast the pecans
Heat a small skillet over medium heat and add pecans (¾ cup).
Toast, stirring frequently, until fragrant and lightly browned.
Transfer to a plate and set aside.

Bake the Brie
Place the baking sheet with Brie in the preheated oven.
Bake until the Brie is soft and beginning to ooze at the edges, but still holding its shape.

Top and finish
Remove Brie from oven and immediately spread 0.5 cup apple butter over the top.
Scatter the toasted pecans over the apple butter.
Sprinkle 2 tbsp fresh thyme leaves over the pecans.
Drizzle 2 tbsp honey over the top and season lightly with sea salt and cracked black pepper.

Serve
Transfer the baking sheet to a serving board or place the Brie on a platter.
Arrange sliced table bread, fresh apple slices, pear slices, grapes, and crackers around the warm Brie.
Serve immediately while the Brie is still warm and creamy.
