  • 2 tbsp vegetable oil (for browning)

Instructions

Prepare the meatball mixture
In a large mixing bowl, combine ground beef (1 ½ pound), panko breadcrumbs (½ cup), 1 large egg, 0.25 cup minced onion (¼ cup), 2 minced garlic cloves, salt (¾ teaspoon), and black pepper (¼ teaspoon).
Gently fold the mixture together with your hands until just combined; do not overwork.
Roll into 24 meatballs, each about 1.5 inches in diameter.

Brown the meatballs
Heat vegetable oil (2 tablespoon) in a large skillet or Dutch oven over medium-high heat until shimmering.
Working in batches to avoid crowding, add meatballs and brown on all sides, about 8–10 minutes total per batch.
Transfer browned meatballs to a plate.

Make the apple cider glaze
In a small bowl, whisk together apple cider (1 ½ cup), whole grain mustard (3 tablespoon), apple cider vinegar (2 tablespoon), brown sugar (2 tablespoon), Dijon mustard (1 tablespoon), ground ginger (½ teaspoon), and ground cinnamon (¼ teaspoon) until smooth.

Braise the meatballs in glaze
Pour the glaze into the skillet and add 2 sprigs fresh thyme (2 sprigs).
Return all meatballs to the skillet, nestling them into the glaze.
Bring to a simmer, then reduce heat to medium-low and simmer uncovered for 15–18 minutes, stirring occasionally, until the glaze thickens and coats the meatballs.
Remove thyme sprigs and serve warm.
