Vibrant, no-cook emulsion of fresh parsley, garlic, olive oil, and red wine vinegar—bright and garlicky condiment for grilled beef.

For a smoother texture, finely mince the garlic and parsley by hand or pulse in a food processor before combining with liquids. Red pepper flakes add gentle heat; adjust to taste or omit for a milder sauce.

Chimichurri is best served fresh but will keep in an airtight container in the refrigerator for up to 3 days; flavors meld and deepen slightly. This sauce pairs beautifully with grilled steak, roasted vegetables, and grilled chicken.

  • 1 cup fresh flat-leaf parsley
  • 3 garlic cloves
  • ¼ cup red wine vinegar
  • ¾ cup extra-virgin olive oil
  • ½ tsp red pepper flakes

Instructions

Prepare the herbs and garlic
Roughly chop 1 cup packed fresh flat-leaf parsley (1 cup).
Mince garlic cloves finely.
Combine and emulsify
In a mixing bowl, whisk together red wine vinegar (¼ cup), extra-virgin olive oil (¾ cup), red pepper flakes (½ teaspoon), kosher salt (½ teaspoon), and black pepper (¼ teaspoon) until the oil and vinegar begin to emulsify.
Stir in the chopped parsley and minced garlic until well combined.
Taste and adjust salt, pepper, or vinegar as needed.

Serve
Spoon chimichurri over grilled beef or other proteins immediately, or transfer to a serving bowl for guests to add to taste.
